Anís Tenis

This morning I took Betty and the children to the Central Market to buy a kilo of atún de sorro, tuna belly strips, some pine kernels, parsley and a sack of onions, I’ve already got oregano, paprika and dry Anís Tenis, the aniseed liquor. As a contrasting side dish to accompany the Coca amb Tonyina, Alicantinos like to serve brevas, the type of figs that grow in this region. But they are out of season right now, so instead we bought some nisperos to go with the pie, they’re not so sweet and can be a little tart, but very juicy and tasty just the same.

The authorities, la Administración, in this case ‘la Conselleria de Agricultura y Pesca’ provide ‘una Denominación’ to authentic the origin and correct elaboration of regionally defined products, in this case alcoholic drinks.

La necesidad de proteger los productos identificados mediante “Denominaciones”, con todo lo que representa de fidelidad a las características que originaron su prestigio inicial, lo propio de sus materias primas y su proceso de elaboración, lleva a establecer un reglamento interno que fije las “condiciones de uso” de ese nombre geográfico. – The need to protect the products identified by “Denominations”, with everything that represents fidelity to the characteristics that gave rise to its initial prestige, the characteristics of its raw materials and its manufacturing process, leads to the establishment of an internal regulation that fixes the ” terms of use “of that geographical name.

‘No I didn’t, but I do know that they make an aperitif with Anís and call it una paloma.’

En la actualidad, la denominación ‘Anís Paloma de Monforte del Cid’ se refiere al anís elaborado en la provincia de Alicante, obtenido por destilación de anís verde o anís estrellado, en alcohol neutro de origen agrícola con un grado alcohólico situado entre el 40 y el 55% en volumen. El contenido máximo en azúcar por litro de anís debe ser de 50 gramos. – At present, the name ‘Anise Paloma de Monforte del Cid’ refers to anise made in the province of Alicante, obtained by distillation of green anise or star anise, in neutral alcohol of agricultural origin with an alcoholic degree between 40 and 55% by volume. The maximum sugar content per liter of anise must be 50 grams.

One of the distilleries is located in Monforte del Cid and goes by the trading name of Anis Tenis, and is a well established sponsor of the Hogueras festivities.
