Anís Tenis

This morning I took Betty and the children to the Central Market to buy a kilo of atún de sorro, tuna belly strips, some pine kernels, parsley and a sack of onions, I’ve already got oregano, paprika and dry Anís Tenis, the aniseed liquor. As a contrasting side dish to accompany the Coca amb Tonyina, Alicantinos like to serve brevas, the type of figs that grow in this region. But they are out of season right now, so instead we bought some nisperos to go with the pie, they’re not so sweet and can be a little tart, but very juicy and tasty just the same.

The authorities, la Administración, in this case ‘la Conselleria de Agricultura y Pesca’ provide ‘una Denominación’ to authentic the origin and correct elaboration of regionally defined products, in this case alcoholic drinks.

– The need to protect the products identified by “Denominations”, with everything that represents fidelity to the characteristics that gave rise to its initial prestige, the characteristics of its raw materials and its manufacturing process, leads to the establishment of an internal regulation that fixes the ” terms of use “of that geographical name.

– To protect these products against bulks, without sanitary guarantees and possible fraud or imitations, in 1987 the Association of Manufacturers of Brandy, Compounds and Liquors requests from the Administration in this case the Department of Agriculture and Fisheries a Denomination and recognition for the four most emblematic drinks of our province, the appetizer – coffee, the Cantueso, the Anís paloma and the Herbero.

‘A glass of water first,’ I say adding the water to the onion-flavoured oil in my saucepan and put it on the hob. ‘Now we need that special touch.’ I go to the drinks cabinet and take out a bottle of Anís Tenis.
‘What a distinctive bottle,’ Betty says as I add some spirit to the stock in my pan.

‘Did you know that this is produced locally, at the distillery in Monforte del Cid, a small town just outside of Alicante?’ I pass the square bottle to her.
‘No I didn’t, but I do know that they make an aperitif with Anís and call it una paloma.’
